Cajun Recipe - Fat Free Roux

Fat Free Roux

Needed for Gumbo and Fricassee. 
Extra roux may be kept in refrigerator.


Ingredients:


1 cup all-purpose flour

Method 1:

Place flour in a cast iron skillet. Bake at 400 degrees, stirring occasionally, until dark brown

Yield: 1 cup

Method 2:

Place flour in a cast iron skillet; cook over medium heat, stirring constantly, until flour is dark brown.

Yield: 1 cup

Method 3:

Place flour in a glass casserole. Microwave on HIGH for 2 minutes; stir well. Repeat microwaving flour at 2 minutes intervals, stirring well, until flour is dark brown.

Yield 1 cup
